Make The Best Vegan Chorizo at Home!

This delicious Vegan Chorizo is so easy to make while still having all of the flavors of a traditional Mexican Chorizo, sometimes called Longaniza. We use few ingredients and it requires minimal effort and tools, so it's extremely simple. This way you no longer need to purchase it at the store, you can make the best vegan chorizo right in your home.

Ingredients:
1 Cup TVP
1/2 Cup Avocado Oil
Water for boiling, about 5 cups

For the Sauce:
6 Chiles Guajillo
2 Dried Chipotle Chiles
2 Garlic Cloves
2 Tsp Nutritional Yeast
1 Tsp Black Pepper
1 Tsp Garlic Powder
1 Tsp Dried Oregano
1 Tsp Smoke Paprika
1.5 Tsp Sea Salt
4 Tsp Liquid Aminos
1/2 Tsp Apple Cider Vinegar
1 cup of the water from the chiles


Hydrate the TVP and dried chiles in boiling water.
Drain the TVP
Drain the chiles BUT keep 1 cup of the water for blending
Add all the ingredients for the sauce to a blender and blend until very smooth . Pass through a sieve.
In a cast iron skillet, heat to medium heat, add the avocado oil, then the TVP, and finally the sauce. Mix well.
Cook for about 15 minutes on medium-low heat.
Turn up the heat at the end, once the sauce has been incorporated fully, and crisp up as much as you would prefer.
