Hello all and welcome back to our kitchen at Roco&Co.!
In today’s video we will be preparing gluten-free French Bread.
Gluten-Free French Bread Recipe
-8 cups Cup4Cup Gluten-Free Multipurpose Flour (1100grams)
-2 Instant Yeast Packets (15 grams)
-4 teaspoons Baking Powder (18 grams)
-2 teaspoons Salt (14 grams)
-4 cups Water (900 grams)
Other Ingredients Needed Later In Recipe
-Corn Flour
-Medium Coarse Cornmeal
-Olive Oil
Instructions
In large bowl combine flour, yeast, baking powder, and salt. Mix to combine. Next, add water in batches, stirring thoroughly between each addition so as to avoid clumping. Mix dough until it begins to pull away from bowl. Once dough is finished, lightly coat with a thin layer of olive oil and cover with plastic wrap. Allow dough to rest for two days, refrigerating during night, and allowing to be at room temperature during the day.
Once resting is completed, preheat oven to 400 degrees Fahrenheit (200 degrees C). Line a large baking sheet with parchment paper and lightly sprinkle a thin layer of cornmeal over entire baking sheet. Divide dough in two equal portions and place on baking sheet. Drizzle olive oil over top and smooth into loaf shape. If dough becomes sticky simply drizzle with more oil as needed and continue shaping.
Once dough is shaped dust loaves generously with corn flour until loaves no longer have a sheen. Using a serrated knife, score loaves approximately ¼ inch deep in desired pattern.
Bake in oven until bread is golden brown, approximately 30 minutes. Allow to cool until bread is warm to touch. Slice to serve.
