Wash hands well with soap and water.
3 handfuls of flour
a little salt
small palm of baking soda
warm water
Mix well with hands, once dough doesn't stick to hands place back in bowl and cover with a towel for 15 to 30 minutes and let rest.
Depending on if you want a fluffy sopapilla roll it out thin,
if you prefer a more hearty fried bread leave the dough thicker!
Fry in slightly smoking hot oil of your choice.
Don't leave the stove, cooks quickly.
Make either a Navajo Taco or Stuffed Sopapilla depending on how thin the dough is. Healthy lunch or dinner is easily prepared by smothering with red or green chile sauce and topped with shredded lettuce, chopped tomatoes, cut green onions, shredded colby jack cheese and sour cream.
Best served warm with honey or powdered sugar as a desert.
