Salmon is baked and served over a bed of lemony orzo pasta with tomatoes and spinach!

Salmon with Orzo Pasta
Ingredients
For the salmon
1 1/2 lbs salmon fillet, divided into 4 portions
Salt and pepper
Olive oil
Lemon juice
For the orzo
5 garlic cloves, minced
10 oz grape or cherry tomatoes, halved or 2 Roma tomatoes, diced
2 cups orzo pasta
4 cups chicken broth
4 cups spinach
3-4 tablespoons lemon juice, or to taste
Zest of 1 lemon
3 tablespoons olive oil
Directions
Preheat oven to 400 degrees.
Place salmon onto a baking sheet. Season both sides with salt and pepper and drizzle over olive oil.
Bake for 12-15 minutes, or until the salmon is cooked through.
While the salmon is baking make the orzo.
Combine lemon juice, lemon zest and olive oil in a small bowl.
Heat oil in a pan over medium heat and sauté garlic for 30 seconds.
Add tomatoes and cook for 1 minute.
Stir in orzo along with more oil and cook for 1 minute.
Add chicken broth and season well with salt and pepper. Bring to a boil then lower heat to medium low, cover and cook for 12 minutes.
Stir in olive oil/lemon mixture.
Stir in spinach and cook until just wilted then remove from heat.
Top with cooked salmon fillets. Season salmon with more salt, pepper and lemon juice if desired.
