This Maltese baked rice recipe (Ross il-forn) is inspired by my mum’s multicultural cookbook, but I’ve given it my own twist — more flavour, better texture, and no parboiling! If you love easy family meals, this oven-baked rice with meat and tomatoes is one you’ll want to make again and again.

I adjusted the rice-to-meat ratio, added more spices, and changed the method — no parboiling here! Instead, the rice goes in raw, soaking up all those beautiful flavours as it bakes to golden perfection. The result?
