Paneer Frankie Roll
Ingredients:
Paneer - 250 gms (sliced)
Onion - 2 cup (thinly sliced)
Green capsicum - 1/2 cup (thinly sliced)
Yellow capsicum - 1/2 cup (thinly sliced)
Red capsicum - 1/2 cup (thinly sliced)
Corns - 1/4th cup
Tomato - 1/4th cup (finely chopped)
Schezwan sauce/pizza & pasta sauce - 3 tbsp
Tandoori mayonnaise - to spread on the tortilla
Hung curd/Thick curd - 2 tbsp
Salt - as per the taste
Chilli flakes - 1 tsp
Turmeric powder - 1/4th tsp
Flour/Maida - 2 cup
Oil - 4 tbsp
Recipe:
For tortilla-
1. Take 2 cups maida, 4 tbsp oil & salt in a bowl, with the help of normal water, knead into a hard dough.
2. Keep it on rest for 10-15 minutes.
3. Now make thin round tortillas and do not over cook. (You can keep them in freezer for 10-15 days)
For the filling-
1. Take panner slices & thick curd and marinate for 5-10 minutes.
2. Take a pan, put 2 tbsp oil, add onion and sauté for 3-4 minutes, cook till light golden brown.
3. Now add tomatoes, capsicums, marinated paneer & mix well.
4. Now add salt, turmeric powder & mix well on high flame.
5. Now add chilli flakes & mix well, cover the pan & cook for 2-3 minutes on low flame.
6. Add 3 tbsp schezwan sauce & mix well.
For the frankie rolls-
1. Take the tortilla, apply oil on both and cook till light crisp.
2. Now take some tandoori mayonnaise, spread over the tortilla, take the paneer filling & put it in the middle.
3. Now fold the tortilla into a roll & your frankie roll is ready.
