Written recipe for Laccha Mathi
Ingredients-
2 Cups Maida/Flour
4 tbsp Sooji/Semolina
2 tbsp Besan/Gramflour
4 tbsp Cornflour
4 tbsp+ 1 tbsp ghee
1/2 tsp Jeera/Cumin
1/2 tsp Haldi/Turmeric
4-5 Laung/Clove
1 tsp Sabut kali mirch/Black pepper
Pinch of asafoetida
2 tsp Kasuri methi
Salt- to taste
1/2 tsp Ajwain/Carom seeds
2 tsp Sabut dhania/Coriander seeds
2 tsp Kashmiri red chilli powder
Chaat Masala
Water
Method-
1. Roughly grind jeera, dhania, kali mirch, hing, lal mirch in a mixer grinder, in between add besan, sooji & grind well.
2. Now for dough, mix maida, prepared mixture, haldi, ajwain, kasuri methi, salt, ghee & make a hard dough.
3. Mix ghee & cornflour or maida and form a paste to paste the roti's.
4. Divide the dough into 8 equal proportions & make into medium thick sheets.
5. Now, paste 4 sheets using the prepared cornflour mix, roll them together so that there isn't any air between the sheets, apply more paste on the top & roll them together tightly.
6. Now cut the roll into approx 1 cm thick wheel.
7. Roll them in hands & make mathis.
8. Fry them on low flame till crisp.
9. Take the mathis out & sprinkle some chaat masala on top.
10. You can store them for a long time in an air tight container & enjoy with your tea.
