Here's a good old Southern recipe that was shared with me from my friend Hans in North Carolina. His grandmother used to make these cheese (she called them "wafers") biscuits and they disappeared quickly! After making them, I can see why! These are delicious. The whole gang was in the Cavalcade kitchen for this one and did we ever eat these up! You can use different cheeses if you prefer, but I stuck to the original recipe. These look a bit like cookies, but have a cracker like crunch and a biscuit lightness. Thanks for the recipe, Hans!
2 cups Extra sharp cheddar cheese
2 sticks margarine, softened (if you're using margarine here, make sure you use real margarine - at least 80 percent vegetable oil - and not a "spread" which contains a lot of water). You could use butter, but I've not tried that variation so I don't know how they might turn out.
2 cups all-purpose flour
2 cups crisped rice cereal (Rice Krispies)
1/2 tsp cayenne pepper (less or more to taste)
Pre-heat oven to 375 degrees.
In the large bowl of a stand mixer, beat the margarine until fluffy. Add shredded cheese and mix to combine. Add the flour and cayenne pepper and mix until well blended. Dough will be thick. Finally, add the crisped rice cereal and combine. Don't over mix and crush the cereal - this is what adds a nice crunch to the biscuit.
Using about a table spoon of dough for each biscuit, roll into a ball and place on parchment lined baking sheet. Using a floured fork to flatten balls, make a criss-cross pattern on each biscuit.
Bake 12-14 minutes. Bottoms of biscuits should be lightly golden.
Transfer to cooling rack.
