GARDEN HUCKLEBERRY JAM
INGREDIENTS
900g Garden Huckleberries – trimmed and washed
1.5kg Granulated Sugar
Juice of one lemon
½ bottle of Certo Apple Pectin
METHOD
1 Add the berries to a preserving pan with a cup of water and boil for 25-30 minutes to soften the fruit
2 Squash the berries with a potato masher
3 Add the lemon juice and boil for a further 30 minutes. Make sure the fruit does not stick or burn on the bottom of the pan
4 Turn off the heat and add the ½ bottle of Certo. Stir in well
5 Heat the pan quickly and start testing if the jam is set:
Place a saucer/ plate in the fridge and allow to cool.
Spoon a small amount of the jam on to the saucer and return to the fridge
Take the saucer out of the fridge and gently drag a finger over the top of the jam dollop – if you can pull a skin from the surface then the jam is ready to jar up.
If not, try again and again until ready.
6 Take the pan off the heat and ladle the jam into sterilised jars and seal.
7 Label the jars and enjoy!
