WELCOME TO DAY 3 OF VLOGMAS Today I'm making Christmas midnight pasta. This is an easy budget friendly meal! It a great dish for people who struggle with low energy but still want to do some holiday cooking.
Recipe is down below:
*Ingredients*
Pasta: 1 bag of xmas pasta : https://amzn.to/4r8n4NE
Bacon: 3-4 slices thick-cut bacon, diced
Garlic: 4-6 cloves, sliced or minced
Olive Oil: 1/4 cup extra-virgin (adjust as needed)
Red Pepper Flakes: 1/2 - 1 teaspoon (optional, for heat)
Parsley: 1/4 cup fresh, chopped (optional, for garnish)
Parmesan/Pecorino Cheese: For serving (optional)
Salt and Black Pepper: To taste
*Instructions*
Cook the Pasta: Bring a pot of salted water to a boil and cook the pasta according to package directions until al dente. Before draining, reserve about 1/2 cup of the starchy pasta water.
Cook the Bacon: While the pasta cooks, heat a large pan over medium heat. Add the diced bacon and cook until the fat renders and the bacon is cooked (to your desired crispness). Remove the cooked bacon bits from the pan and set aside, leaving about 1-2 tablespoons of the bacon fat in the pan.
Infuse the Oil: Reduce the heat to medium-low. Add the olive oil, sliced garlic, and red pepper flakes (if using) to the pan. Cook slowly until the garlic is lightly browned and fragrant, allowing the flavor to infuse the oil.
Combine Ingredients: Add the cooked bacon bits back into the pan with the garlic mixture.
Toss the Pasta: Using tongs, transfer the al dente pasta directly from the water into the pan with the bacon and oil mixture.
Create a Sauce: Add about 1/4 cup of the reserved starchy pasta water to the pan. Cook on low heat, tossing continuously, until the water reduces and emulsifies with the oil to create a light sauce that clings to the pasta. Add more pasta water a tablespoon at a time if needed.
Finish and Serve: Remove from heat. Stir in the fresh parsley and season with black pepper and salt if necessary. Serve immediately, topped with grated Parmesan or Pecorino cheese if desired.
