Sourdough Bread with Chocolate Chips
This is my go-to small chocolate chip sourdough boule 🍫
Perfect sweet and sour balance!
Made with 350 g flour, naturally leavened, and filled with milk chocolate chips for a subtle, balanced sweetness.
The dough is mixed simply, folded gently, and cold-proofed overnight for flavor and structure.
Perfect for a smaller loaf — great crumb, crisp crust, and just enough chocolate in every slice.
This is a great recipe if you’re new to sourdough or if you’re looking for a sweet variation that still feels like real bread — not dessert, not cake, just comfort.

Sourdough Bread with Chocolate Chips
Ingredients:
350 g bread flour / 2¾ cups (spooned & leveled)
235 g warm water / 1 cup (minus 1 Tbsp)
70 g active sourdough starter / ⅓ cup
10 g salt / 1½ tsp
120 g chocolate chips / ⅓ cup
👩🍳 Step-by-Step Instructions
1️⃣ Mix
In a bowl, combine: water and starter
Mix until milky. Add flour and salt. Mix until no dry spots remain.
Cover and rest for 45 minutes.
2️⃣ Strengthen the Dough
Pefrorm the 1st set of “stretch and folds” and / or “Slap and folds” for about 5 min
Cover and rest 30 minutes.
3️⃣ Gently fold in the chocolate chips.
Do 2 more sets of stretch & folds, every 30 minutes.
4️⃣ Bulk Fermentation
Cover and let ferment until:
*dough looks airy
*has risen about 30–40%
*feels lighter and elastic
⏱️ Usually 3–5 hours, depending on room temperature.
5️⃣ Shape
Lightly flour your surface.
Shape into a tight boule.
Rest 15 minutes, then final shape.
6️⃣ Cold Proof
Place seam-side up in a floured basket (I use rice flour)
Cover and refrigerate 12-48 hours.
7️⃣ Bake
Preheat oven + Dutch oven to 450°F (230°C).
Bake: 30 minutes covered and about 15 minutes uncovered at 425°F (230°C)

Cool completely before slicing 🍫✨ (I wait about 2 hous)

I used milk chocolate but you can use dark chocolate, mini chocolate chips or chocolate chunks
For extra aroma: add ½ tsp vanilla or orange zest
This size makes a perfect small boule
There’s a little secret in this recipe (not really a secret 😉):
fold the chocolate chips in during the stretch and folds, not after bulk fermentation.
This helps the chocolate distribute more evenly throughout the dough.
