Beef Pho (Lao Style)

Welcome back. Today I am making my most requested recipe from family and friends; my version of Lao Style Pho.

Beef Pho
Boil water before adding beef....need enough to cover the meat
5.5 lbs - Bone-in beef
1 tsp - Black pepper
4 tsp - Kosher salt
1 tsp - MSG flavor enhancer (optional)
8 whole - Star anise
1 tbsp - Sugar
4 cloves - Garlic
1 stick - Cinnamon
4 stalks - Lemongrass
5 thick pieces - Galangal
2 tbsp - Dark soy sauce
1 tsp - Thin soy sauce
4 stalks - Celery
1 whole - Onion
** boil this mixture for about 1.5 hours **
Remove meat
Separate meat from bones and return bones back to broth
Meat will be added before serving
Add daikon radish (optional...I only recently started adding this)
Add more salt and dark soy sauce if needed
** Simmer for 6-7 hours **
Note: I typically prefer to simmer for a day or two for a more flavorful broth.
Boil rice noodles or egg noodles if you prefer
To Garnish:
Beef from before
Limes
Sliced tomatoes
Cilantro
Spring onions
White onions
Coarsely ground, toasted peanuts
Spices/Seasoning to serve:
Garlic oil
Sugar
Black Pepper
Soy sauce
Fish sauce
Rice Vinegar
Sambal chili sauce
Sriracha
Garlic chili paste
