Several friends and family members have asked how I make sourdough bread, so I decided to start a short series sharing my process — beginning with how I feed and maintain a small, stiff sourdough starter.
In this video, I show:
The equipment I use
How I keep a very small stiff starter going (to reduce waste)
How I feed my starter in the evening to prepare for baking later
I typically keep about 37g of starter in my jar. To maintain it, I take 5g of starter and feed it 12g water + 20g all-purpose flour. This method was inspired by Eat Basil & Bloom and has worked really well for keeping sourdough simple and manageable.
For this bake, my recipe called for 200g of starter, so I fed the remaining starter 84g water + 84g flour. This sits on the counter overnight. The next morning, I mix my ingredients, and the bread is baked a day or two later — sometimes after a longer ferment for additional gut health benefits.
