I’m making for the first time a Sweet Potato and Pineapple Bread Pudding. I have made Pineapple Bread Pudding numerous times however, this is a different bread I am using for the first time and also I am using Coconut Sugar for the first time. We will see how this recipe turns out together in my TEST KITCHEN testing recipes. This is a HCLF (high carb low fat) friendly recipe.

Servings 8 = 717 calories
155g carbs / 8.5g fat / 13.3g protein
1pkg Power Grains Sourdough Sandrich Rolls (use any bread you like macros will change)
2 cup Organic Coconut Sugar (I used Madhava)
1 cup Organic Whole Milk
1 cup 2% Organic Milk
14.8 oz blended Sweet Potato
3 Organic Large Eggs beaten
10.5 oz crushed Pineapple
Preheat Oven to 370 degrees (for my oven) your temp may need to be 360 or so. Mix pineapple, sweet potato, coconut sugar, eggs, milk and mix. Add in cubed bread and soak for 15-30 minutes depending on how dense your bread is. Bake in a 9x13 greased or parchment lined baking dish.
Bake for 60-90 minutes depending of the bread you used and the your oven temperature.
