Afghani Egg Curry Recipe
Ingredients
• Green chilies – 6 to 8
• Onion – 1 big (sliced)
• Cashews – 8 to 10
• Cumin seeds – 1 tsp
• Garlic – 1 tsp
• Oil – 1 tbsp
• Salt – to taste
• Ginger-garlic paste – 1 tsp
• Boiled eggs – 4 to 6
• Cinnamon stick – 1 small,cloves-2
• Elaichi (cardamom) powder – ½ tsp
• Kasuri methi – 1 tsp
• Water – as needed
• Curd-1 spoon
• Garam masala-1/2 spoon, pepper powder-1/2 spoon
Method
1. Heat oil in a pan. Add cumin seeds, garlic, green chilies, sliced onion, and cashews.
2. Sauté until onions turn soft. Let it cool, then transfer to a blender jar.
3. Add salt and ginger-garlic paste. Grind into a smooth paste.
4. Boil eggs. (Optional: fry them lightly for extra flavor).
5. In the same pan, add the prepared paste with some water.
6. Add cinnamon stick ,cloves and elaichi powder, pepper powder and garam masala Cook until oil separates.
7. Add boiled (or fried) eggs , curd and kasuri methi. Let it simmer for 2 minutes.
8. Turn off the heat and serve hot.
Serving Suggestion: Best enjoyed with naan, roti, jeera rice, or flavored rice.
