A classic Andhra dish! Here's a recipe for Chepala Pulusu (Nellore Style Fish Curry):
Ingredients
1. 1 kg fish pieces (any white fish works well, such as pomfret or tilapia)
2. 1 small onion, chopped
3. 1small tomato
4.1/2 spoon mustard seeds
5. Pinch if fenugreek seeds
6. 1 teaspoon cumin seeds
7. 1/2 teaspoon turmeric powder
8. 1/2 teaspoon red chili powder
9.2spoons of mango paste or mango pieces (5to6count)
10. Salt, to taste
11. 2 tablespoons vegetable oil
12. 2 tablespoons tamarind paste
13. 2 cups water
14. Fresh cilantro, for garnish
15. Curry leaves, for garnish
Masala powder preparing:
1.1spoon mustard seeds
2.1spoon coriander seeds
3.1spoon jeera
4.1spoonpeppercorn
5.mix all together in mortar pestle or blender to coarse or fine powder
6.cover with lid to save the aroma of the powder
Instructions
1. _Marinate the fish_: Marinate the fish pieces in a mixture of turmeric powder, red chili powder, and salt for 60minutes.
2. _Heat oil_: Heat 5spoons tablespoon of oil in a pan over medium heat.
3. _Add fenugreek,mustard and cumin seeds_: Add fenugreek ,mustard seeds and cumin seeds, and let them sizzle for a few seconds.
4. _Add onions and tomatoes _: Add chopped onions, and mix then add sliced or puree of tomatoes and mix until they are soft.
5. _Add marinated fish_: Add the marinated fish pieces and sauté for 2-3 minutes, or until they are coated with the spice mixture.
6. _Add tamarind paste and water_: Add tamarind paste and water, and bring the mixture to a boil.
7. _Simmer_: Reduce the heat to low and simmer the curry for 10-15 minutes, or until the fish is cooked and the sauce has thickened.
8.add freshly prepared masala powder.and mix gently..
8. _Garnish_: Garnish with fresh cilantro and curry leaves.
9. _Serve_: Serve the Chepala Pulusu with rice or roti.
Nellore Style Tips
1. Use a mixture of coriander seeds and cumin seeds for added flavor.
2. Add a splash of lemon juice for a burst of citrus flavor.
3. Use tamarind paste instead of fresh tamarind for a deeper flavor.
4. Simmer the curry for a longer time to develop a thicker sauce.
5. Serve with a dollop of ghee for added richness.
Variations
1. Add other spices, like mustard seeds or fenugreek seeds, for added flavor.
2. Mix in some chopped vegetables, like carrots or potatoes, for added nutrition.
3. Use different types of fish, like shrimp or mussels, for a variation.
4. Add a splash of coconut milk for a creamier curry.
5. Serve with a side of rice or roti for a filling meal.
