SWEET STUFFED CREPES — Recipe
Batter (makes ~16 crepes):
3 large eggs
1 dash salt
1/2 tsp vanilla extract
100 g sugar
35 g olive oil
150 g flour
600 ml milk
100 ml water
Fillings (suggestions):
Nutella
Various jams
Thickened sour cream
For serving:
Thickened sour cream
Fresh berries
Powdered sugar
Honey or maple syrup
Instructions:
Whisk eggs, salt, vanilla, sugar and oil until combined.
Add flour and whisk to a smooth batter.
Gradually add milk and water, whisking to a thin batter without lumps.
Let the batter rest for at least 30 minutes.
Heat a pan over medium heat; lightly grease.
Pour and swirl batter to coat thinly the pan.
Cook for 2,5-3,0 minutes until edges are golden brown, then flip and cook for another 1,0 minute. Repeat to make 16 crepes.
Fill each crepe with Nutella, jam or thickened sour cream; fold or roll.
Serve with a dollop of thickened sour cream, fresh berries, dust with powdered sugar and drizzle honey or maple syrup.
Nutrition:
Yield: 16 crepes
