Eating healthy soups like this is the best self care- while it is delicious, the main reason I make this every week is because it truly nourishes my body.
Because this has been a stressful week in the news, I wanted to share this gut healthy soups.
Your serotonin in created in your gut and when you are constantly stressed your stomach is going to get messed up.
I’m not saying this soup will fix all your stress, but it will help you manage it better.
2 stalks celery
3 small yellow onions
6 small cloves garlic
2 medium carrots
1 medium apple
2 parsnips
1 cup celeriac
1/2 fennel
4 small potatoes
Oil
Black pepper
2 bay leaves
Chili flakes
Salt
8 cups vegetable broth
Parsley
Chop up all your vegetables. Add about 2 tbs of oil to a pan, bring to medium heat and add black pepper, chili flakes, and bay leaves.
Add in your vegetables with a generous pinch of salt. Cook the vegetables on medium high for about 10 minutes, they should reduce in size and the onions will become transparent.
Add in vegetable broth, add in more if the soup is looking a bit thick.
Cook for about 30 minutes or until the vegetables are fork tender
Remove heat and add in about 1 cup of chopped parsley.
