Save money and eat healthier by making staple like tofu at home.
If your local grocery store doesn’t sell dried soybeans and you aren’t near an Asian market you have a few options.
To get dried soybeans you can go to your local co op and ask the grocery manager to special order you dried soybeans ( I did this when I lived in Seattle at PCC)
Alternatively you can order from whole food grocery stores like azure standard in the US or in the UK @Buy Wholefoods Online
Tofu and falafel
Ingredients:
2 cups dried soybeans
water
Tofu:
8 cups water
1 tsp Nigari
pinch of salt
pinch of MSG (optional)
Falafel:
1 cup cooked Chickpeas
1/3 cup chopped red onion
3 cloves garlic
½ cup cilantro
½ chili
2 tbs olive oil
¼ cup bread crumbs
1 tsp cumin
1 tsp coriander
1 tsp turmeric
Instructions:
Soak your soybeans overnight, they will double in size
Blend half of your soybeans with about 4 cups water
Pour into a cheese cloth or nut milk bag
Squeeze out the milk from the pulp
Put the pulp in another large bowl
Blend and strain the rest of the soybeans, saving the pulp
Tofu:
Add the milk to a large pot and set to medium heat
Stir milk as it heats up to prevent milk from burning
Once the milk begins to boil remove it from the heat
Add 1 tsp of nigari to 4 tsp of water to dissolve it
Pour it into the milk and stir
Set aside for 10 minutes for the curds to form
Line a cheesecloth inside of a bowl or tofu mold and scoop the curds into the mold. Pour in the rest.
Fold the cheesecloth over the surface of your bowl and press out the water. Alternatively you could find a heavy object and set that over the curds to press out the water.
Let it rest for about 10 minutes before removing from the bowl/mold.
Store in cool water or use right away!
Falafel:
Add all the ingredients from the Falafel ingredients list to a food processor or blender- blend until smooth.
Add to the soy bean pulp and mix.
Take about 2 to 3 tablespoons worth of the falafel mix and create little balls.
Air Fry or bake at 400F or 180C for 20-25 minutes, flipping hallway through.
Cook until golden brown and crispy
