Easy Creamy Pineapple Curry 🍍🥥
Experience the vibrant soul of the coast! Creamy pineapple curry (often known as Kaeng Sapparod in Thai cuisine). This isn't your standard curry; it’s a golden-hued, sweet, savory and spicy flavored masterpiece where juicy pineapple chunks swim in a rich, silken coconut gravy. Finished with a tempered aromatic sizzle, it’s the ultimate comfort food for tropical souls.
It’s a "vacation in a bowl" that turns the acidity of fresh fruit into a rich, complex sauce.
🛒 Ingredients You’ll Need
For marination -
• Chopped pineapple 1cup (Cut into thick chunks; slightly ripe is best for a sweet-tart balance)
• Chopped curry leaves 6 to 7
• Red chilli powder 1/2 tsp
• Turmeric powder 1/4 tsp
• Chopped coriander 1 tbsp
• Amrutva cold pressed filtered coconut oil 1 tbsp (The heart of the dish—provides that authentic tropical aroma and velvety mouthfeel)
The Flavor Foundation (Curry base) -
• Coconut milk 1 cup
• Rice flour 1 tbsp
• Amrutva cold pressed filtered coconut oil 1 tbsp
• Mustard seeds 1/2 tsp
• Cumin seeds 1/4 tsp
• Chopped garlic 1/2 tsp
• Chopped ginger 1/2 tsp
• Chopped green chilli 1 tsp
• Curry leaves 6 to 7
• Turmeric powder 1/2 tsp
• Salt as per taste
• Chopped coriander leaves 1 tbsp
👩🍳 Simple Step-by-Step Method:-
1. first in a bowl marinate pineapple with all its ingredients & keep it aside for 1 to 2 minutes.
2. in a pan take Amrutva cold pressed filtered coconut oil & roast marinated pineapple.
3. now to make curry base in a bowl take coconut milk, rice flour & mix properly.
4. in a pan heat Amrutva cold pressed filtered coconut oil. Add mustard seeds, cumin seeds, chopped garlic, chopped ginger, chopped green chilli & curry leaves & cook.
5. then off the flame & add prepared coconut milk base & stir continuously.
6. again On the flame & add turmeric powder, salt. Then mix properly.
7. add chopped coriander & marinated pineapple. Mix properly.
8. cook for 2 minutes
9. The Finish: Serve hot over a bed of steaming hot Jasmine or Basmati rice.
10. ready to serve
