We’re taking the iconic North Indian street food—Paneer Tikka—and folding it into a crisp, golden tortilla for a "Quesadilla" that is bursting with flavor. Forget boring sandwiches; this recipe features succulent cubes of paneer marinated in a bold yogurt spice mix, layered with crunchy bell peppers and a decadent melt of mozzarella. It’s high-protein, incredibly satisfying, and ready in minutes.
🛒 Ingredients You’ll Need
For stuffing -
• Amrutva Groundnut oil: 2 tbsp
• Sliced paneer: 100 gm
• Ginger garlic paste: 1 tbsp
• Yellow bell pepper: 1/2 cup
• Red bell pepper: 1/2 cup
• Green capcicum: 1/2 cup
• Salt as per taste
• Red chilli powder 1/2 tsp
• Barbeque masala 1 tsp
• Paneer tikka masala 1 tsp
• Chat masala 1 tsp
• Schezwan chutney 1 tsp
• Lemon juice 1 tsp
Other ingredients :
Tortillas as required
Smokey tandoori mayonnaise as required
Cheese slice as required
Lettuce as required
Onion salad as required
Grated cheese as required
Amrutva Groundnut cold-pressed oil for shallow fry
Method :-
For Stuffing:
in a pan heat oil.
add paneer & roast until golden brown.
then add ginger garlic paste & cook
then add all veggies & roast them
then add salt, red chilli powder, Barbeque masala, paneer tikka masala chat masala & mix properly.
add Schezwan chutney & mix properly.
switch off flame & add lemon juice & mix
keep it aside.
on tortilla/roti spread Smokey tandoori mayonnaise. Put cheese slice & lettuce .
add prepared stuffing, sliced onion, grated mozzarella cheese.
fold it
on tawa take Amrutva Groundnut coldpress oil & roast Quesadilla from both sides.
The Tikka Marinade:
Paneer: 200g (Small cubes)
Greek Yogurt: 3 tbsp (Hung curd works best)
Ginger-Garlic Paste: 1 tsp
Spices: Kashmiri Red Chilli powder, Turmeric, Garam Masala, and Chaat Masala
Amrutva Groundnut Oil: 1 tbsp (For that authentic smoky pungency)
The "Quesadilla" Build:
Whole Wheat Tortillas: 2-4 large (or thin rotis)
Bell Peppers & Onions: Thinly sliced
Cheese: 1 cup shredded Mozzarella
Fresh Cilantro: Finely chopped
Butter/Ghee: For grilling the tortilla
👩🍳 Simple Step-by-Step Method
1. Marinate: Whisk the yogurt, spices, and Amrutva cold-pressed groundnut oil. Toss in the paneer cubes and let them soak up the flavors for at least 20 minutes.
2. The Sizzle: Pan-sear the marinated paneer on high heat until the edges are slightly charred and "tikka-style." Toss in the onions and peppers for the last 2 minutes so they soften but stay crunchy.
3. The Assembly: Lay a tortilla flat. Spread a generous layer of cheese on one half, top with the paneer tikka mix, sprinkle fresh cilantro, and add another layer of cheese (this is the "glue"!).
4. The Toast: Fold the tortilla over and grill on a tawa with a little butter. Press down firmly until the tortilla is golden-brown and the cheese has completely melted into a gooey delight.
