Sautéed Zucchini with Vegetables
Ingredients
3 zucchini
2 medium onions
3–4 medium carrots
5–6 medium tomatoes
1 package mushrooms
6 garlic cloves, mashed
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp Johnny’s seasoning
1 tsp lemon pepper
3–4 tbsp sour cream
3 tbsp butter
Olive oil (as needed)
Instructions
1. Chop all vegetables into bite-sized pieces.
2. Heat olive oil and butter in a large skillet over medium-high heat.
3. Add onions, carrots, and tomatoes. Sauté for about 5 minutes, stirring constantly.
4. Add mushrooms and cook for 2–3 minutes.
5. Stir in zucchini, mix well, then cover with a lid. Cook for about 10 minutes, stirring occasionally.
6. Add mashed garlic, salt, pepper, garlic powder, Johnny’s seasoning, and lemon pepper. Mix well.
7. Stir in sour cream and sauté for another 10–15 minutes until vegetables are tender and flavors are well combined.
8. Taste and adjust seasoning as desired.
Serving Suggestions
Serve hot or cold with mini pita bread wheat bread or sourdough bread.
Pairs well as a side dish or light vegetarian main course.
