Recipe
Ingredients
Chicken marinade
3 lb chicken tenderloin (sliced into strips)
1 tsp salt
1 tsp garlic powder (heaping/full)
2 tbsp cornstarch
1/2 tsp black pepper
1 tsp paprika
1/2 cup milk
Vegetables
1 large onion or 2 small(thinly sliced)
2 small packs mushrooms (sliced)
2 medium green pepper (thinly sliced)
2 tbsp butter
Olive oil (as needed)
Salt and pepper (to taste)
Sauce
16 oz heavy whipping cream
8 oz tomato sauce
3 tbsp sour cream
2 tsp hot sauce (to taste)
1-2 tsp paprika
1 tsp salt (or to taste)
1 tbsp Mexican seasoning mix
Instructions
1. Marinate chicken
Mix chicken strips with salt, garlic powder, cornstarch, black pepper, paprika, and milk.
Cover and refrigerate overnight.
2. Prepare vegetables
Heat butter and a little olive oil in a pan.
Sauté onions until softened. Add green peppers and cook until caramelized.
3. Stir in mushrooms. Cook until they reduce in size. Season lightly with salt and pepper. Remove from pan and set aside.
3. Cook chicken
Fry marinated chicken on high heat for 5–10 minutes, stirring constantly until light golden.
4. Make the sauce
Reduce heat to medium. Add heavy cream, tomato sauce, sour cream, hot sauce, paprika, salt, and Mexican seasoning. Stir well.
5. Combine
Return the sautéed onion, pepper, and mushroom mixture to the pan. Stir everything together.
Let cook on medium heat for about 5 minutes, lightly boiling.
6. Adjust seasoning
Taste and add more salt, pepper, or spices to your taste.
7. Cook your favorite Mexican rice, add refried beans, then top with fresh lettuce, and sour cream. Enjoy it with flour tortillas.
