🧄 INGREDIENTS (Chole)

Kabuli chana – 1 cup (overnight soaked)

Pyaz – 1 medium (finely chopped)

Tamatar – 2 medium (puree)

Adrak-lahsun paste – 1 tbsp

Hari mirch – 1 (slit)

Chole masala – 2–3 tsp

Red chilli powder – 1 tsp

Turmeric powder – ½ tsp

Coriander powder – 1 tsp

Garam masala – ½ tsp

Salt – to taste

Oil – 2–3 tbsp

Water – as needed

Fresh coriander – for garnish

🫓 INGREDIENTS (Bhature)

Maida (all-purpose flour) – 2 cups

Suji (semolina) – 1 tbsp

Yogurt – ¼ cup

Sugar – 1 tsp

Baking powder – ½ tsp

Salt – ½ tsp

Warm water – to knead dough

Oil – for deep frying

🍽️ HOW TO MAKE (In Short)

Chole boil: Soaked chana ko pressure cooker me 4–5 whistles tak pakayein.

Masala tadka: Oil garam karein, pyaz fry, phir ginger-garlic and tomato puree add karein.

Spices add: Chole masala, haldi, mirch, coriander powder daalein.

Chole mix & simmer: Boiled chole daalkar achchhe se mix karein, thoda paani add karein aur 10–12 mins simmer karein.

Dough for bhature: Maida + suji + salt + sugar + baking powder + yogurt + water se soft dough banayein.

Rest & Fry: Dough ko 30 mins rest karein, phir medium size balls bel kar hot oil me puff and golden fry karein.
