Zangi is relatively a new food in Hokkaido and it first appeared in 1960 in a city called Kushiro located in the East Hokkaido. Kushiro has been one of the chicken farming centres on the island and a chef owning a small local Chinese restaurant invented this dish making use of the local chicken. It’s wide spread all over Hokkaido, now and made in every household there.
Zangi (Hokkaido-Style Fried Chicken)
-INGREDIENTS -
1kg Chicken thighs (boned)
3 Tbsp Sake
4 Tbsp Soy sauce
2 tsp salt
2 Tbsp Sugar
40g Ginger
4 cloves Garlic
1 tsp Ground white pepper
1/2 tsp Ground black pepper
2 eggs
4 Tbsp flour
10 Tbsp Katakuriko(Potato starch)
