Juicy oven-baked chicken quarters with crispy potatoes, served with a fresh broccoli and beetroot salad. Simple, flavorful, and perfect for an easy homemade meal.

Ingredients:
2 chicken quarters
1 tbsp paprika
1 tsp turmeric
1 tbsp dried parsley
1 tsp dried oregano
1 tsp salt
½ tsp black pepper
3 tbsp olive oil
Juice of ½ lemon
1 tsp garlic powder (optional)
1 tsp onion powder (optional)
2 peeled and chopped potatoes

Instructions:
1️⃣ In a bowl, mix all the spices, olive oil, and lemon juice.
2️⃣ Rub the marinade generously over the chicken quarters, set aside to marinate until ready to use. reserving a small amount of the marinade for the potatoes.
3️⃣ Toss a little of the same marinade with the chopped potatoes.
4️⃣ Place the chicken and potatoes in a baking dish.
5️⃣ Bake in a preheated oven at 180°C (350°F) for 35 minutes.
6️⃣ Flip the chicken and potatoes, then bake for another 35–40 minutes, until golden and fully cooked.

🥗 Broccoli & Beetroot Side Salad
Ingredients:
½ small broccoli, chopped
1 Persian cucumber, chopped
1 tomato, diced
4–5 olives, sliced
1 cooked or roasted beetroot, chopped

Dressing:
Juice of ½ lemon
1 tsp dried parsley
Black pepper, to taste
Olive oil, to taste

Instructions:
Mix all the salad ingredients in a bowl. Drizzle with lemon juice and olive oil, add dried parsley and black pepper, and toss well.
