I have made this eggless sponge cake in kadhai / kadai so that even if you don't have access to special tools and equipments used in baking a cake, still you can make it without any hassle. By following this recipe, you will easily be able to make a perfect vanilla sponge cake which is soft, fluffy and moist. This is a very simple cake recipe with very few ingredients easily available at home.

Why buy cake from market for Rs 500 when you can make it easily at home in Rs50.
Here i have not used any fancy tools and equipments just simple home cooking with very few ingredients easily available at home and also no egg, no oven, no electric beater, no cake tin, no butter, no condensed milk just basic easy cooking which you all can do.

Ingredients:
Maida 1cup
Powdered sugar 1/2cup
Baking powder 1tsp
Baking soda 1/2tsp
Oil 1/4cup
Curd 1/2cup
Water 1/2cup
Vanilla Essence 1tsp

Method:
-Preheat a kadai just like we preheat an oven.
Preheating is a very important step.
Put 2cup of salt and place a stand over it and cover the kadhai with a lid. Preheat on low flame for 10-15mins till then the cake batter will be ready
-Take any steel/aluminium container as cake tin and grease it with few drops of oil and line it with butter paper or dust maida over it
-Take a bowl place a sieve and sieve all dry ingredients. Keep aside.
-Take another bowl and mix in all wet ingredients with the help of a hand whisk
-Now start mixing the dry ingredients to the wet ingredients bowl half at a time
-Mix well until just combined. Do not overmix
-Cake batter is ready it should be of ribbon consistency
-Pour it in prepared cake tin and bake for 30-35mins on low flame
-Insert a skewer and check. Cake is ready😊

*Preheating is an important step
*Sieving the dry ingredients is mandatory for best results
*All ingredients to be at room temperature
*Do not unmould while its hot. Let it cool completely and then un mould
*While the cake is getting cooled cover the top with a muslin cloth so that the top part of cake doesn’t dry up
*Please check the expiry of baking powder n baking soda before use for best results.
