It’s a birthday celebration at Rogue Bakers! 🎂
Tonight we’re celebrating Brooke’s Birthday LIVE by baking some of her favorite cookies — all long-fermented and sourdough-style!
Here’s what’s on the menu tonight:
🍪 Pumpkin Chocolate Chip Cookies – Brooke’s all-time favorite, now perfected in long-fermented sourdough form!
RECIPE:
Mix These Ingredients about 8-12 hours before you plan to bake:
1 1/2 Cup (367.5g) Pure Pumpkin Pureee
3 Cups All Purpose Flour
1 Tsp Salt
2 Tsp Pumpkin Pie Spice
1 Tsp Ground Cinnamon
1/4 Tsp Ground Ginger
3/4 Cup (1 1/2 Sticks) Butter (Softened to room temp)
1/2 Cup Sourdough Starter/Discard
Mix and let Ferment for 8-12 hours Then add the Following:
1 Cup Light Brown Sugar, Packed
3/4 Cup Granulated Sugar
1 Large Egg
2 Tsp Whole Milk
1 1/2 Tsp Baking Powder
1 Tsp Baking Soda
1 Cup Chocolate Chips
Bake At 350 For 12-15 Minutes

RECIPE:
Mix These Ingredients about 8-12 hours before you plan to bake:
I Cup Milk
3/4 Cup (1 1/2 Sticks) Butter
1 Tsp Vanilla
2 Cups Flour
1/2 Cup Cocoa Powder
1/2 Tsp Salt
Mix and let Ferment for 8-12 hours Then add the Following:
1 Cup Sugar
2 Eggs
1/2 Tbsp Baking Soda
1 Cup Chocolate Chips
Bake At 375 For 10-12 Minutes

RECIPE:
Mix These Ingredients about 8-12 hours before you plan to bake:
3 cups flour
1/2 teaspoon nutmeg
2 teaspoons salt
1 1/2 cups butter
1 1/2 teaspoons cinnamon
2 cups mashed bananas
1 cup of sourdough starter
Mix and let Ferment for 8-12 hours Then add the Following:
1 teaspoon baking soda
2 cups sugar
2 eggs
3.5 cups rolled oats
2 cups milk chocolate chips
1 cup white chocolate chips
Bake At 350 For 12-15 Minutes
Whoopee Pie Filling Recipe:
2 Cups (4 Sticks) Butter (Softened)
1 Pound Box Confectioners Sugar (3 3/4 cups)
16 oz Container Marshmallow Fluff
4 Tsp Vanilla
