Being a Gujarati, many people always asked me, Why is there Khaman in Khaman Dhokla? Is it different from Dhokla? And surprisingly the answer is Yes its different. Khaman refers as Something made from Besan or Chana Dal which is both steamed and cooked. It has a very soft, sponge like texture whereas Dhokla can be made with rice or any dal, it’s also steamed and cooked but usually flat.
With my this recipe you can enjoy Khaman Dhokla anytime you love without awaiting for 8 to 12 hrs of patience and hard work. It is as Easy as baking a cake. And it requires no fancy ingredients ONLY EVERYDAY INGREDIENTS…DOES’NT IT SOUND LOVELYY. So let’s get started without wasting anymore time.
Preparing Time: 5 Mins
Cooking Time: 15-20 Mins
Serves: 3-4 Persons
Calories (Per piece): 81 Cal
Ingredients:
For Batter:
1-1/4 cup of Besan
¼ tsp of Oil
3 tsp of Sugar (Gujarati Dhokla are usually on a sweeter side)
Salt as per Taste or 1 tsp
¼ tsp of Turmeric or Haldi
½ cup of Water
1 tsp of Eno or Fruit Salt or A Sachet
1 tsp of Lemon Juice
For Tempering:
2 tbsp of Powdered Sugar
1-1/2 tsp of Lemon Juice
¾ cup of Water at Room Temperature (Too Hot or Cold will flatten the Dhokla)
1 tbsp of Oil
1 tsp of Mustard Seeds
½ tsp of Cumin Seeds
2 Green Chilli
4-5 of Curry leaves
Grated Coconut for Garnish
Method:
*In a bowl mix all the ingredients except Eno and lemon. As Eno activates and works very efficiently when mixed with an Acid in this case its Lemon Juice.
*Then add I together and mix it vigorously as shown in the video.
*Pour it in a greased plate with oil and steam it 15-20 mins.
*Allow it to cool down completely (usually takes 20-30 mins). Till then prepare the vaghar and water tempering.
*After cooled down add it to the Dhokla. Allow the water to be soaked by the Dhokla (About 5 mins).
*Serve it and Enjoyyyy!!
