Welcome to Sakshi's Kitchen
How many of you LOVEEE lemon desserts? As much I do! If yes, you really need to try my lemon cupcakes or cake!! This recipe is super super simple with using just everyday ingredients no as such fancy ingredients and also NO BUTTER NO FLAX EGG NO BANANA NO MILK NO LEMON EXTRACT and believe even though we don’t have any fancy ingredients this CAKE turns out incredibly super moist, soo light and fluffy! All that will just melt in your mouth with a tinge of lemony sourness. It is just an amazing balance of SWEETNESS N SOURNESS or rather FRESHNESS. So let’s not add more water to your mouth and begin with the recipe.
Preparation Time: 10 Mins
Baking Time: 25 Mins in Oven and 45 Mins in Cooker/ Self-made oven
Serves: 4
Ingredients:
3/4 cup of Castor Sugar/ Granulated Sugar
2 tbsp of Dried Lemon Zest (I love storing this for my other deserts so I have it available with me but if you don’t have it not to worry you can use fresh lemon skin and just grate it)
1 cup of Curd
1/3 cup of Vegetable Oil or any Flavorless Oil like Coconut Oil, Sunflower Oil, Canola Oil etc. Avoid Mustard Oil/ Olive Oil because of it pungent taste.
1 tsp of Vanilla Extract
1-1/4 cup of All purpose Flour
2 tbsp of Corn Flour (THIS IS MY SECRET INGREDIENT which makes your cake the ULTIMATE FLUFFY ONE, if you don't have it not a problem again just add All purpose flour 2 tbsp more)
1-1/4 tsp of Baking Powder
1/2 tsp of Baking Soda
1/4 tsp of Salt (My other favorite ingredient for cakes...this just adds so taste to other ingredients)
1/4 cup of Lemon Juice
2-3 tbsp of Water, Room Temperature
Note: It is very important that all your ingredients are at a room temperature because When at room temperature, butter, curd and other dairy ingredients form an emulsion which traps air. While baking in the oven, that trapped air expands and produces a fluffy baked good. For example: a light-textured cake or a tender cupcake.
Method:
*Grind Sugar and lemon Zest together until yellowish in color.(I know this itself is a complete desert but hold on the best is yet to come)
*Sift all the dry ingredients and in another mix all the wet ones. Except Lemon Juice.
*Make a well in the dry ingredients and add lemon juice and then other wet ingredients. (As shown in the Video)
*With the help of scoop or measuring cup pour the batter in cupcake liner and bake it @180° for 12-15 min.
*And then all done, top it with fresh cream icing. Stay tunned for the recipe of that one.
