Easy Scandinavian Bread
Ingredients (makes 8 rolls):
450g Bread Flour (1 pound)
2-2.5 cups of water
one bag instant yeast, 7gm, 1/4 oz
10 g salt, one tablespoon
mixed seeds (optional topping)
Instructions:
1. Mix all dough ingredients until no dry spots remain. Cover and rest 15 minutes.
2. Stretch & fold the dough once, then cover and refrigerate for few hours ( preferably overnight, up to 48 hours).
3. Preheat a baking tray or pizza stone to 480F (250 °C).
4. Release dough from bowl with a scraper, place on a floured surface, and cut into 8 pieces. Optionally roll each piece in mixed seeds.
5. Put rolls on the hot tray for 25 minutes at 480F (250 °C).
6. Cool few minutes before serving.
