Bamboo shoots are one of the ingredients that symbolize spring in Japan.
I got a fresh bamboo shoot from a friend, so I'll use it to make mixed rice.
And this time, I also introduce how to boil bamboo shoots.
Bamboo shoots contain a lot of lye, so boil them with rice bran.
By doing this, the rice bran will adsorb the lye.

【Ingredients】
150g bamboo shoot
300g rice
300cc soup stock
2 tbsp soy sauce
2 tbsp mirin
small amount of Japanese pepper leafs
[ How to Boil ]
plenty of water
30g rice bran
1 chilli pepper
【Recipe】
[Boil]
1, Peel the bottom and cut off the root.
Scrape off the red lumpy part at the around the root.
Cut off the 3cm of top part diagonally.
Make a cut in the skin about 5cm from the top.
By doing this, when it is boiled, the inside will be cooked quickly.
2, Put bamboo shoots and enough water to soak them in a pot.
Add rice bran and chili pepper.
3, Put on high heat.
When it boils, reduce to low heat, and boil for 1-2 hours.
Boil time depends on the size of bamboo shoots.
Small size is 1hour.
Medium size is 2 hours.
Big size is 3 hours.
Add when the water runs low on the way.
Boil until tender.
Try sticking a skewer on a bamboo shoot, and if you stick it easily, it's done.
Cool while soaking in a hot water.
After that, remove the skin.
[ How to Make Mixed Rice ]
1, Wash the rice.
While exchanging water, wash until the water is no longer turbid.
Soak in water for 30 minutes.
2, Cut the bamboo shoot vertically into 4 equal parts.
Slice the bottom part to 3cm.
Upper part is cut vertically.
3, Put the rice, dashi soup stock, soy sauce, and mirin in a clay pot.
Mix and flatten the rice.
Arrange bamboo shoots on top of rice.
4, Cover and put on high heat.
When it boils, reduce to low heat.
Cook over low heat for 8 minutes.
When it's time, turn off the heat and leave it for 15 minutes.
By doing this, Rice will be steamed.
5, When rice is cooked, mix and sprinkle the "sansho" Japanese pepper leaves to finish.
