This time I make "Ehomaki" sushi roll.
In Japan people eat this at Setsubun day.
Setsubun is the event held to pray for our happy and healthy.
Usually, the 3rd or 4th of February.
But this year's Setsubun is February 2nd.
This is the first time in 124 years!!
Japan has a calendar that divides the year into 24,
called the 24th season. also called 24 solar terms.
Setsubun is one of them.

On Setsubun day, people turn to the good direction of the year and eat this.
The good direction for this year is south-southeast.
"Eho" means good direction.
And it's said that if you eat up silently, your wish will come true!

【Ingredients】
300g cooked rice
2 tbsp sugar
1/2 salt
2 tbsp rice vinegar
1 seaweed
(omelet)
6 eggs
1 tbsp light soy sauce (regular soy sauce is okey)
1 tbsp sugar
1 tbsp oil
20g tuna
20g salmon
20g squid
2 shrimp
1/4 cucumber
20g salmon roe
4 shiso leafs
【Recipe】
1, Make omelet.
Break the eggs in a bowl and mix.
Add seasoning.
Heat the oil in a frying pan.
Add eggs.
Cover and bake slowly over low heat.
When the surface of the egg is almost solidified, turn it over.
2, Peel the shrimp shell.
Make a cut in the back and take out the internal organs.
Skewer the shrimp.
Boil the shrimp.
3, Make sushi vinegar.
Mix sugar, salt, and rice vinegar.
Add sushi vinegar to cooked rice, and mix.
Cool with a fan.
4, Cut the cucumber into 8 equal parts.
Cut the omelet into 1cm wide sticks.
Cut the seafoods into 1cm wide sticks.
5, Roll the Ehomaki.
Spread the vinegared rice on seaweed.
