I go over what temperature to preheat the oven to with the Dutch oven inside, how to transfer your dough, and how to score the loaf so it opens up beautifully. Then I break down when to keep the lid on, when to take the lid off, and when to lower the temperature so you get great oven spring, a blistered crust, and a fully baked interior. I use a classic Dutch oven so it’s easy to follow along, since that’s how most people bake their sourdough at home. These are the exact baking steps that consistently give me my nicest, most reliable loaves.
