Quail and Rabbit Breakfast Sausage

I have had some requests for cooking videos so I thought I would share my quail and rabbit breakfast sausage recipe. Below is the recipe for the spice mix. Keep in mind, this is for 1 pound of meat so you need to adjust it to match the amount of meat you are using.
· 1 pound of meat (ideally a 25 to 30% fat ratio)
· 1 teaspoon salt
· 2 large garlic cloves chopped
· 1 teaspoon onion powder
· 1 tablespoons chili powder
· 2 tablespoons paprika
· 1 teaspoon cayenne
· 1 teaspoon ground cumin
· 1/2 teaspoon dried oregano
· 1/2 teaspoon dried thyme
· 1/2 teaspoon crushed red pepper
· 1/2 teaspoon freshly ground black pepper
