Here it is the recipe of all recipes.. Kimchi! This is a traditional napa cabbage kimchi recipe, also know as Baechu Kimchi (배추김치).
Ingredients List:
1 x napa cabbage (about 2 lbs.)
kosher salt
~ After salting, let sit at least 2 hours. Time will vary depending on temperature and weather. Check and rotate every 30 minutes ~
Porridge:
1 cup water, 1 T. rice flour, 1 T. sugar
4 oz. carrot
8 oz. daikon radish
4 x green onions
*4 oz. onion
*1 oz. ginger
*3 oz. Korean pear (or Asian pear)
*1/4 cup minced garlic
1/4 cup fish sauce
1 T salted baby shrimp
1.5 cup gochugaru
= puree together in blender
Properly stored kimchi can last up to 6 months.
