Zucchini Bread Recipe - LIVE

Описание: Zucchini bread is easy to make and you don't need any fancy equipment for this delicious treat. You can make the classic bread loaves or make muffins! Add some cream cheese frosting and you have cupcakes!

Anyone with a garden this year should have plenty of zucchini this year. Making zucchini bread is an easy and classic way to use up some of the zucchini.

ZUCCHINI BREAD RECIPE
makes 2 loaves or 24 muffins
4 eggs (beat until foamy)
2/3 C oil
1 C sugar
2 C brown sugar
3 1/2 C grated zucchini (about 1 ½ lbs)
1 Tbsp real vanilla
4 C flour
1 ½ tsp salt
2 1/2 tsp baking powder
1 Tbsp cinnamon
1 C nuts
2 C Chocolate chips (optional)
Preheat oven to 350
In a medium bowl beat the eggs until foamy
Add the oil, sugar, brown sugar and vanilla – mix well
Add the zucchini and mix
In a large bowl mix the flour, baking powder, salt, and cinnamon, whisk
Add the wet to the dry and blend
Add the nuts (and/or chocolate chips)
Pour into two grease 8 1/2 x 4 1/2 loaf pans
Bake for 55 mins

** For Chocolate Zucchini Bread substitute ½ C flour for ½ C Cocoa.
