Everything cooks together on one sheet pan and turns out tender, flavorful and incredibly satisfying. 🥗 INGREDIENTS
Roasted Cabbage + chickpeas
• 11-14 oz ( 300-400 g) cabbage, cut into 1-inch (2.5 cm) pieces
• 1 can / 240g cooked chickpeas
• 2 tsp garlic powder
• 4 tbsp olive oil
• Fresh parsley or other herbs you like, finely chopped
• Salt & black pepper, to taste
Tahini sauce
• 1/3 cup + 3 tbsp (100g) tahini
• 2 tbsp olive oil
• 2 tbsp apple cider vinegar
• 4 tsp of maple or any other syrup
• 2 cloves of garlic
• Water to thin if needed (a few tablespoons of water)
• Salt to taste

📝 INSTRUCTIONS
1. Cut the cabbage into squares. Drizzle with olive oil. Season with salt and black pepper. Place on a sheet pan.
2. Open the can of chickpeas. Rinse under cold water and pat dry with a kitchen towel. Toss with olive oil and garlic powder. Place on the sheet pan.
3. Bake the cabbage and chickpeas (top and bottom heat) in a preheated oven at 425°F (220°C) for about 20–25 minutes, turning and stirring once halfway through.
4. Meanwhile, prepare the tahini sauce. Drizzle over the cabbage and chickpeas and enjoy!
