I'm a big fan of using the whole animal when cooking, the nose-to-tail philosophy. I'm also a fan of trying to use what you have around you. What better way to show this than making a delicious Beef ❤️ Heart Tartare with self-picked Ramsons (wild garlic). Beef heart is a cut of meat that is really cheap, has tons of flavour and it's the leanest muscle on the animal.
