C/w Nana: Lao Sawdust Salad (ແໜມຂີ້ເລື່ອຍ == Nam Khii Leuay)

Описание: Nam Khii Leuay (ແໜມຂີ້ເລື່ອຍ) is a salad made with ground roasted rice. The jasmine rice is first cooked and then allowed to dry. Depending on the temperature, it could take 2-3 days to dry the cooked rice naturally. This is a great dish to try when you have leftover cooked jasmine rice.

This dish is not hard to make. The hardest part is just waiting for the rice to dry before roasting it. I have only used the naturally air-dry method of spreading it out in the sun. If we have left-over jasmine rice, my mom usually dries it, so I had some dried rice for making this.

Some folks have pointed out that your can also use the instant rice, such as Uncle Ben brand, if you don't have patience to wait for the rice to dry. With the instant rice, you just roast it from the box, because it has already been boiled and dried. It's a good shortcut if you are in a hurry, but I prefer the old way.

In this video, I made enough sauce for about 6 cups of ground rice, but I only used 2 cups of rice. If you just want to make enough sauce for the 2 cups of rice, just divide the sauce ingredients by three. But, I think it's better to make more sauce and save it for later in case you have the craving.
