How to Make Churro Cupcakes

These delicious and simple Churro Cupcakes are sure to be a big hit for Cinco de Mayo or any festive fiesta celebration! (Recipe below)
CUPCAKE INGREDIENTS:
1 box French Vanilla cake mix
3 eggs
1 Cup water
1/3 cup oil (I use canola)
1 oz box sugar free/fat free instant vanilla pudding mix
1 Tbsp ground cinnamon
FROSTING INGREDIENTS:
3/4 Cup butter, softened
1 Tbsp vanilla
1 tsp. ground cinnamon
1 Tbsp. milk
3 Cups powdered sugar
Cinnamon Sugar
INSTRUCTIONS:
1. Preheat oven to 350 degrees. Line two muffin tins with 24 liners and set aside.
2. Prepare the cake mix according to package directions. My mix called for 3 large eggs, 1 Cup water and 1/3 Cup oil which I beat at medium speed for 2 minutes. Next, add the pudding mix and cinnamon to the batter and mix to combine completely. Pour the batter evenly among the muffin tins, filling about 2/3 of the way full. Bake for approx. 15 minutes or until a tester inserted into the center comes out clean. Allow to cool completely.
3. In the bowl of a stand mixer, cream together the butter, vanilla and cinnamon until creamy. Gradually add the powdered sugar, about 1/2 cup at a time, until creamy. If the frosting is too thick to spread, add 1 Tbsp of milk at a time until you reach your desired consistency.
4. Place frosting in a pastry bag and pipe onto cooled cupcakes. Sprinkle cinnamon sugar on the tops and decorate as you prefer.

Recipe makes 24 cupcakes.
Note: If you prefer a substantial amount of frosting (as shown in video), then double the frosting recipe.
