This lemon butter salmon is juicy, flaky, and ready fast 🍋🧈

Ingredients
• 2 salmon fillets (1 ¼ lbs.), I used Atlantic Salmon
• 2 tablespoons of olive oil
• ½ of a lemon juice
• 3 cloves of garlic, minced
• 1 teaspoon of dried thyme leaves
• ½ teaspoon of smoked paprika
• Salt and black pepper to taste
• Fresh parsley, for garnish (optional)
Veggies
• 1 lb. baby potatoes
• 1 bunch asparagus, trimmed
• 2 tbsp olive oil
• Salt and black pepper, to taste
Instructions
1. Preheat your oven to 400°F (200°C). Line 2 baking sheets with parchment paper or foil for easy cleanup.
2. Wash and trim the ends off the asparagus. Spread them on the prepared baking sheet along with the baby potatoes. Drizzle with olive oil, then season generously with salt and pepper and roast for around 15 – 20 minutes.
3. Make lemon herb sauce. Mix olive oil, lemon juice, minced garlic, dried thyme leaves, and smoked paprika.
4. On another prepared baking sheet, season the salmon fillets with salt and pepper. Drizzle the lemon herb sauce over the salmon fillets.
5. Bake for 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
6. Garnish with fresh parsley and serve immediately. Enjoy your healthy, balanced dinner!
