Tasty Perennial Greens!! French Sorrel for Late Winter/Early Spring Food Forests & Veg Patches

I can never get enough diversity when it comes to greens in my garden. Doubly so for low-maintenance perennial veggies which can be grown in fruit tree guilds or traditional veg patches.
French Sorrel checks all the boxes: perennial, easy to grow, packed with nutrition, and a bright lemony flavor.
French Sorrel is easy to start from seed in early spring or from divisions right now in later winter. Here in the Pacific Northwest, I can harvest it in winter and through to spring, and for folks’ in harsher climates, it is enjoyed as a traditional spring veg.
My favorite ways to enjoy this veggie:
1. In a bisque, puréed with white beans, shallots, heavy cream
2. In a salad, served with pork loin or fish
3. Sautéed pea shoots, boiled potatoes, pesto.
