Recipe for 2 small multigrain breads! ... full of flavors!
425g Wholemeal flour (good quality!)
300ml Water
6g Salt
4g Sugar
7g Dry yeast (when using fresh yeast: 21g)
10g Butter (optional, gives softness!!)
65g Mixed seeds (to mix in dough)
+-100gr Mixed seeds, to decorate the breads.
USE THESE MEASUREMENTS FOR THE BEST RESULTS... NOT CUPS ETC....!!
Process:
-Prepare water (20degrees C), soak seeds in water for 15 minutes.
-Add flour / dry yeast to a bowl and mix.
-Add salt, sugar, butter and water to the mixture.
Mix slowly for + 4 minutes, until well mixed.
Mix fast for + 6 minutes, until extensible and well developed.
-Dough temperature should be around 27 degrees C.
-Cover up dough, rest for 30 minutes.
-Divide into 2 breads of 385g.
-Shape them into a pill, cover up and rest for 30 minutes.
-Prepare tins.
-Shape dough into breads, decorate with seeds.
Let them proof for + 1 hour.
Bake on 250C / 482F, when breads are in oven DECREASE to 200C / 392F.
Bake for +-24 minutes and use steam!
