Passion fruit or any other Fresh fruits in cakes makes it so tasty and soft. Adding a bit of coconut in to it makes it so softer.
The passion fruit pulp was about 1 cup or 250 ml. If the passion fruits are smaller you might need to add more liquid or more pulp.
Ingredients
125 g /1 Stick butter
2 Eggs
1-2 cups sugar
6 Passion fruits
300 g / 2 cups Self Raising flour
1/4 cup or 35 g desiccated coconut
2 Table spoons milk
For the glaze
250 g Icing /confectionery sugar
pulp of a passion fruit.
