As a brand new coffee roastery, you may be thinking about how do I develop a product line that would suit my hypothetical customer base.
I would ask you to stop. And instead of thinking about what your customers may want, do instead what you want. You can guarantee the thing that you enjoy and that's the thing that will be tested when you're in front of somebody trying to sell your product to them. If you're hypothesizing what your customers may want, I guarantee that you will not hit the mark.
So in the development cycle of your roast business, make sure that you have a very defined interpretation of the coffee that you enjoy and seek to emulate that when you get roasting. I guarantee that that will help you into the future.
