Hello! Welcome to our cozy corner! In this first video of ours, we will show you a quick and simple recipe from "Recipes from the World of Tolkien" by Robert Tuesley Anderson (not sponsored). This is one of our favorites from the book so far, and we hope you enjoy it as well!
Ingredients:
Scant 1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup, plus 2 tablespoons melted, unsalted butter
Generous 1/3 cup light brown sugar
2 eggs
2 small, very ripe bananas
4 tablespoons honey (for drizzle)
Process:
Line a 12-cup muffin tray with paper liners
Sift the flour, baking soda, and baking powder together into a bowl
Combine and mix together the melted butter, brown sugar, beaten eggs, and mashed bananas in a separate, larger bowl
Slowly mix in dry ingredients, until evenly combined. Divide the cake batter into the paper liners
Bake in preheated oven, at 325 °F for 20-25 minutes, or until risen and slightly firm to the touch
Carefully transfer the cakes onto a wire rack and drizzle with honey (we also like to add a sprinkle of powdered/confectioner's sugar)
Serve warm or cold (both are delicious!)
