🍖 RECIPE — QUICK BREAKDOWN FOR DESCRIPTION
Poor Man’s Brisket (Smoked Chuck Roast)
Cut: 3–4 lb chuck roast
Rub: 50/50 coarse black pepper & kosher salt, plus 1 tbsp garlic powder
Smoker: 250°F
Wood: Hickory or post oak
Smoke to: 165–170°F
Wrap: Foil or butcher paper
Finish temp: 203–208°F (probe tender)
Rest: 1 hour minimum
Serve: Sliced across the grain like brisket
