Orange Cranberry Cookies
Servings: 48 cookies
These cranberry orange cookies, topped with a sweet glaze, will be the perfect addition to any cookie tray.
Ingredients:
1 cup unsalted butter, softened
1 cup white sugar
½ cup packed brown sugar
1 large egg
2 tablespoons orange juice
1 teaspoon grated orange zest
1 tablespoon of orange extract
2 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
2 cups chopped cranberries
½ cup chopped cinnamon pistachio nuts or walnuts (Optional)
Glaze:
1 ½ cups confectioners' sugar
3 tablespoons orange juice
½ teaspoon grated orange zest
Instructions:
Preheat the oven to 375 degrees F (190 degrees C).
Make the cookies: Cream butter, white sugar, and brown sugar in a mixing bowl until smooth. Beat in egg until well blended. Mix in orange juice, zest, and orange extract.
Whisk together flour, baking soda, and salt in a separate bowl. Stir flour mixture into the butter mixture until combined. Mix in cranberries and cinnamon pistachios or walnuts until evenly distributed.
Drop dough by rounded tablespoonfuls or use 1 inch scoop and place cookies 2 inches apart onto ungreased cookie sheets.
Put cookies in fridge for 30 minutes to chill prior to putting cookies in oven to avoid cookies spreading and being too thin.
Bake in the preheated oven, switching racks halfway through, until edges are golden, 12 to 14 minutes. Transfer cookies to wire racks to cool completely.
Meanwhile, make the glaze: Mix together confectioners' sugar, orange juice, and zest in a small bowl until smooth.
Spread glaze over the tops of the cooled cookies and add finely chopped cinnamon pistachios or walnuts; let stand until set.
How to Store Cranberry Orange Cookies
Allow the cookies to cool completely. Transfer them to an airtight container and store at room temperature for three to five days. If you want to go the extra mile to keep the cookies soft, stick a slice of bread in the container (it'll absorb the dry air, sparing the cookies).
You can freeze baked and unbaked orange cranberry cookies.
To freeze baked cookies: Arrange the cookies in a single layer on a baking sheet, cover, and freeze for a few hours or up to overnight. Transfer the frozen cookies to zip-top bags or another freezer-safe container. Freeze for up to one month.
