Dumplings, 3 ways, North China-style from scratch (猪肉大葱/牛肉茴香/韭菜鸡蛋)

So we wanted to teach you how to make homemade Chinese dumplings from scratch. There's a million different varieties of dumplings, so we wanted to zero in on the North China-style, in particular a heftier variety of boiled dumpling that's popular in Beijing.

First, we'll show you how to make the dough, and follow up with the filling 3 ways: first, one with pork and leek; then, one with beef and fennel; and finally, one with eggs and jiucai (Chinese chives). We'll also, of course, show you how to wrap these up and boil them.
